Day 2

We made it through!

Normally when I cut calories/carbs, I have trouble sleeping, which was true for last night, but I eventually fell asleep and stayed asleep for 8 hours, so that is a huge win.

And I woke up this morning feeling energized.

What I find most shocking is how much not eating a lot of carbohydrates keeps my hunger levels at bay. It is very liberating. It is also really nice to have simple meals on workdays when my focus is on doing my life’s work. That being said, I am excited about the weekend when I will dip into a little bit more pleasure and ease.

I am very excited about the balance that I am learning to find between work and rest, and like I said, turns out the lifestyle I was creating before was a little too heavy on the ease.

Live and learn, right!?

Now, I just hope that my body continues to handle this change well. For example, that I can keep my headache at bay. It can be quite the challenge to loose electrolytes as my body uses up my glycogen, on top of living in the desert!

Here is my food log for today:

Breakfast:

3 eggs

½ oz feta cheese

¼ cup red bell pepper, finely chopped

¼ cup sweet onion, finely chopped

Lunch:

3.5 oz canned chicken

2 cups romaine lettuce

½ cup grape tomatoes

2 tbsp homemade ranch dressing

Dinner:

3 oz ono

1 cup mixed vegetables, steamed
